SAMPLE RECIPE
Kraut Runza (Beef and Cabbage-Filled Rolls)
This German Recipe was passed down from my great-grandmother. This is a tradition of Germans in Nebraska and a 'must' in Nebraska menus."

Filling:
3 lbs. GROUND BEEF
1 lg. head CABBAGE, shredded
1 lg. ONION, thinly sliced
SALT and PEPPER to taste

Dough:
1 pkg. (25 oz.) YEAST
2 cups MILK or WATER
1/2 cup SUGAR
1/2 cup SHORTENING
1 tsp. SALT
2 EGGS, beaten
7-8 cups FLOUR

In a skillet, brown ground beef; add cabbage, onion, salt and pepper. Cook over medium heat until cabbage is tender; set aside to cool. In a large bowl, soften yeast in milk. Add remaining dough ingredients and mix well. Let rise until double in bulk; punch down and let rise again. Turn dough onto a lightly floured surface. Divide in half and roll out to 3/8-inch thickness; cut into 6-inch squares. Place 2 tablespoons filling in the middle of each square, fold dough over and pinch closed. Place squares on a baking sheet and bake at 350° for 20 minutes or until golden brown.

Kearney
The city of Kearney (KAR-nee) was named for Fort Kearney, a government outpost established to protect Oregon Trail pioneers, overland stages, gold prospectors and railroad construction crews. Exhibits at the Great Platte River Road Archway Monument recreate the pioneers' westward journey and pay tribute to America's freedom of mobility. In season, the Kearney area is a stopping point for millions of sandhill cranes, whooping cranes, bald eagles, snow geese, ducks, shorebirds and other migratory birds.
