SAMPLE RECIPE Edward's Virginia Bacon & Mushroom Dip | -S. Wallace Edwards & Sons, Inc., Surry
10 slices EDWARDS'® VIRGINIA HICKORY-SMOKED BACON
8 oz. fresh MUSHROOMS, chopped
1/2 cup finely diced ONION
1 clove GARLIC, minced
2 Tbsp. FLOUR
1/2 tsp. SALT
1/8 tsp. ground BLACK PEPPER
1 pkg. (8 oz.) CREAM CHEESE, cubed
2 tsp. WORCESTERSHIRE SAUCE
1 tsp. SOY SAUCE
1/2 cup SOUR CREAM
1 to 2 tsp. minced fresh PARSLEY or CHIVES
Cook bacon until crisp; drain and set aside. Reserve 2 tablespoons bacon drippings. Sauté mushrooms, onion and garlic in reserved drippings until soft and most of the liquid has evaporated. Stir in flour, salt and pepper and allow to bubble on medium heat for 2 minutes, stirring frequently. Add cream cheese, Worcestershire and soy sauce; heat on low until cheese melts. Stir in sour cream and 8 strips of crumbled bacon. Spoon into serving bowl and garnish with remaining crumbled bacon. Sprinkle with parsley or chives. Serve warm with crackers.
Makes 2 1/2 cups.
Historic Virginia
Virginia was named for Queen Elizabeth I of England (the Virgin Queen). King Charles II named it "Old Dominion" because it remained loyal to the crown during the English Civil War. In 1607, the first permanent English settlement in America was developed at Jamestown. All or part of eight other states were formed from western territory once claimed by Virginia. They are Illinois, Indiana, Kentucky, Michigan, Minnesota, Ohio, West Virginia and Wisconsin. |
