SAMPLE RECIPE
Lemony Tarts
5 Baked TART SHELLS
4 tablespoons CORNSTARCH
1 cup SUGAR
1/4 teaspoon SALT
1 cup BOILING WATER
2 EGGS (separated)
6 tablespoons LEMON JUICE
RIND of 1 LEMON (grated)
1 tablespoon BUTTER

Mix cornstarch, sugar and salt. Add boiling water slowly, stirring to prevent lumps. Cook over low heat until thickened, stirring often. Add beaten egg yolks and remove at once from heat. Add lemon juice, rind and butter, stirring well. Pour into baked pastry shells. Cover with Meringue and bake in 300 F oven 15 minutes.

Meringue:
2 EGG WHITES
4 tablespoons SUGAR
1/2 teaspoon VANILLA
Beat egg whites until stiff (but not dry), adding sugar gradually.
Add vanilla. Spread meringue over tarts.
