SAMPLE RECIPE Olde English Plum Pudding | A Christmas classic that's well worth the time and effort!
6 EGGS
1 qt. SWEET MILK
1 heaping pt. GROUND SUET
1 box SEEDED RAISINS
1 box CURRANTS
2/3 SUGAR
1 scant tsp. BAKING SODA
1 tsp. CINNAMON
1/2 tsp. ALLSPICE
1/2 tsp. CLOVES
FLOUR to make a thick batter
Combine all ingredients, adding enough flour to make a thick batter. Pour batter in greased 1-pound coffee cans, filling about 3/4 full and cover with aluminum foil. Place cans in large pot (canning pot, lobster pot) and fill pot with water halfway up the cans. Boil 3 to 4 hours. Cool in refrigerator (or outside in the snow). When ready to serve remove from cans and cut into 1/2-inch slices. Steam the slices in a double boiler. Serve with Pudding Sauce.
Yield: 4 - 1 pound coffee cans.
Pudding Sauce:
1/2 cup BUTTER
1 cup SUGAR
1 tsp. VANILLA
1 Tbsp. FLOUR
1/2 cup SWEET CREAM
1 1/2 Tbsp. BRANDY
Combine all ingredients except brandy in a saucepan and heat over low heat. Add brandy before serving over Plum Pudding. |
