SAMPLE RECIPE
English Breakfast Muffins
No English breakfast is complete without orange marmalade. These muffins have it inside, as a surprise. Serve with a traditional English breakfast of scrambled eggs, fried tomatoes and mushrooms with a bit of sausage or soy sausage on the side. . . and, of course, a steaming pot of tea. Or enjoy them on their own, as lighter fare.

3/4 cup all-purpose FLOUR
3/4 cup whole wheat FLOUR
1/3 cup SUGAR
2 tsp. BAKING POWDER
2 tsp. GINGER
1/2 tsp. SODA
1/4 tsp. SALT
2 EGGS
1/3 cup SOUR CREAM
1/3 cup fresh ORANGE JUICE
7 Tbsp. BUTTER, melted
1 Tbsp. grated ORANGE PEEL
jar of ORANGE MARMALADE

Mix all dry ingredients in large bowl. Whisk eggs, sour cream, orange juice, butter and orange peel in smaller bowl. Add to dry ingredients, stirring quickly. Fill muffin cups three-fourths full. Spoon one teaspoon orange marmalade in center of each muffin. Bake until brown. Bake at 400 degrees 20 minutes . Makes 16 muffins.

Muffins are done when they come away from the sides of the pan and when a toothpick or knife inserted into the center comes out dry.
